Candied Citrus Cheesecake Recipe: Prep Time: 20mins (plus refrigeration time), Cooking TIme: 15mins, Serves: 16 Ingredients: 125g plain sweet biscuits, crushed 100g butter, melted 500g cream cheese, softened 395g can Nestlé Sweetened Condensed Milk 1/3 cup (80mL) thickened cream 3tsp gelatine Juice & Zest from 1 orange, 1 lemon, 1 lime Candied Citrus – 1 (80g) medium lime, 1 (140g) medium lemon, 1 (240g) medium orange, 1 cup (220g) caster sugar, 1 cup (250mL) water Method: 1. Grease a 20cm spring form pan. Combine biscuits and butter & mix well. Press into sides and base. Refrigerate for 30 minutes or until firm. 2. Using an electric mixer, beat cream cheese, Nestlé Sweetened Condensed Milk & cream until smooth, add citrus zest. Combine citrus juices with gelatine in a bowl, microwave for 30 seconds or until gelatine dissolves, add to cheesecake mixture, whisk until combined. Pour mixture over crumb crust, refrigerate for 2 hours or until set. 3. Meanwhile, make Candied Citrus – using a vegetable peeler & small sharp knife, peel & cut citrus rind into thin strips. In a small saucepan add rind, sugar & wate, bring to the boil over a high heat; reduce heat and simmer without stirring for 10 minutes or until the mixture thickens slightly. Strain & carefully decorate over the top of the cheesecake.
